Keelia’s Kitchen: Pumpkin Cupcakes

I have recently gained a new found respect for Fall. It has really never been a favorite season of mine (besides the fact that I celebrate my birthday in the Fall). After becoming more aware of the beauty in this season, I have genuinely come to celebrate the falling leaves and cooler temperatures. So with Fall comes Pumpkin season and there is no better way to enjoy pumpkins than to indulge in a flavorful sweet treat!
This weekend I whipped up a tasty batch of pumpkin cupcakes. In order to prevent myself from eating an entire dozen, I ended up taking them to work for a certified taste test from my co-workers…and I must say they definitely passed! I brought home 2 empty containers and the cupcakes received rave reviews! Compliments to the chief!
The first step involved gather up all the ingredients. Although the recipe calls for fresh pumpkin, I used canned pumpkin (such a great time saver)! I used a Kitchen Aid mixer to mix the ingredients together.
I placed them in the oven to baked until they passed the tooth pick test. After the cupcakes cooled, I iced them with cream cheese icing!
I sprinkled some chopped pecans and decorated with cute little candy corn!
These babies were soooooo moist and delicious! I’m actually thinking about making some more for thanksgiving…I may try switching out the pumpkin and replacing it with sweet potato.
