Keelia’s Kitchen: Roasted Chicken with Orange Glaze

Just in time for Thanksgiving I attempted to roast my very first whole chicken! I was so nervous because for some reason I associate the word roasting with tons of preparation and long cook times. I wasn’t so off with the cook time though, but the rest took no time at all!

I purchased a 4 1/2 lb chicken from my local grocery store. When I got home I rinsed the chicken and began preparing it for the oven (set oven to 425 degrees). I then stuffed the chicken with half a lemon and a few springs of rosemary and thyme (I also stuffed some onions in the cavity for extra flavor). After that, I rubbed the chicken in olive oil and seasoned with salt and pepper! Coat the bottom of the pan with orange juice and the chicken is ready to bake for about an hour and fifteen minutes. Make sure you periodically baste your chicken while it is baking.

The finished result was so tender and juicy…quite divine!

This afternoon I whipped up this tasty wrap for lunch and filled it with sliced  roasted chicken!
